  • Place the beetroot chunks into a 2-3L jar along with the Celtic sea salt and apple cider vinegar.

  • Fill the jar with filtered water, leaving about 2cm of space from the top.

  • Securely seal the jar with a lid and give the mixture a good shake to combine all the ingredients.

  • Allow the jar to sit at room temperature for 2-4 weeks, ideally in a dark shaded area (a tea towel can help protect it from light exposure). If you’re impatient like me the recipe does work for me if left for 1-2 weeks also.

  • Each day, give the jar a gentle shake to prevent any white mold from forming on the surface.

  • When the kvass is ready, strain the liquid and transfer it into glass bottles for refrigeration.
